Pilot is a seasonal oyster bar aboard one of America's most prized wooden schooners. Pilot presents a concise menu of ingredient-driven seasonal plates by nationally acclaimed chef, Kerry Heffernan. Over the course of Pilot's nearly 100 year history, she's led many lives: as a contender to be the fastest sailboat in the world, as the country's longest serving pilot ship, as a ferry for soldiers in World War II, and as a research vessel that circumnavigated the world twice.

Pilot, like its sister ship Grand Banks, is dedicated to preserving our waterways and fisheries. On our boat, we serve sustainably harvested oysters and only select fish that come from species with healthy wild stocks or have been sustainably farmed. Since opening, we've used metal straws instead of plastic and have taken moves to eliminate our single use glass bottle waste by serving kegged wine and filtered tap water in lieu of bottled. All of our oyster shells go back to the Billion Oyster Project to help reseed oysters in the New York Harbor, and our restaurant has also donated experiences and auction items to support groups like the Surfrider Foundation, Trust for Public Land and more.
